Summer months are coming, and during the scorching heat, we tend to change our diet. Stomach infections are most common during the summer, and there are several foods to prevent that. If you are planning a trip, you should bring some light foods, salads, and fruits that would keep you fresh. During the trips, you should keep your food in clean bags or boxes with lids in portable coolers and freezers. Here are some of the meals which you can make for your trip.

4. Homemade Granola

Ingredients

• 300g of cornflakes and sunflower seeds
• 150g sliced nuts, hazelnuts, and almonds
• 100ml oil
• 120ml honey
• 80g dried grapes
• Cinnamon
• Ginger powder
• Coconut

Preparation

Mix the cornflakes and the sunflower seeds with nuts, hazelnuts, and almonds. Add oil and honey and mix everything up. Add dried grapes to the mixture and put everything on the baking tray and bake it for 20 minutes at 150C. Take it out of the oven and leave it to cool at room temperature. Douse coconut and cinnamon over it as well as ginger powder. As it cools down, the granola is getting harder, and you can break it into pieces using your hands.

3. Peas Pesto

Ingredients

• 200g peas
• 2-3 onions
• 2 garlic cloves
• 50g parmesan or Grana Padano cheese
• 2 large spoons minced almond
• 4-5 leaves of fresh basil
• 50ml olive oil
• Salt
• Pepper
• 750ml water

Preparation

Put peas into the boiling water and add a pinch of salt. Put onions and two tablespoons of olive oil. Let it sit on medium-strong heat for 15 minutes. Take the pot off the heat and let the peas cool down. Once the peas are cool, chop it in the electric food chopper and put it in a bowl in which you will add the rest of the ingredients. Add diced garlic, basil leaves, salt, pepper, almond and olive oil according to taste. The texture should be smooth without any larger pieces.

2. Integral crackers with seeds

Ingredients

• 1 cup integral flour
• Half a cup flour
• Half a cup sesame seeds
• Half a cup sunflower seeds
• Half a cup rolled oats
• Salt
• A pinch of baking powder
• a pinch of garlic powder
• ½ dl oil
• 1 dl water
• Cumin and oregano

Preparation

All of the ingredients except water and oil need to be placed in the bowl and mixed up. After everything is combined, add oil and water and make a dough. Shape the dough into a ball and use kitchen foil to wrap it. Let it sit for at least one hour in the fridge. Once the dough is ready, use the rolling pin to make it around 2 millimeters think. Use the flower to spread the dough without breaking and gluing to the pin. Cut the dough into different shapes and put it inside the oven for 20 minutes at 170C.

1. Zucchini Muffin without gluten

Ingredients (12 muffins)

• 1 large zucchini
• 1 egg
• 1 cup of soy yogurt
• 2 cups of corn flour
• Half a cup olive oil
• Baking powder
• A pinch of salt

Preparation

Shred the zucchini and salt it. Leave it for about 15 minutes until it releases a part of the water. Remove it from water and add the rest of the ingredients. Use olive oil for the muffin tin or put baking paper instead. Fill in the tin with almost to the top and bake for 20 minutes at 200C.
